It's no wonder this smooth and complex truffle was a 2021 Good Food Award winner for the best confections in the country. We developed this truffle after discovering a new type of blond chocolate from Valrhona, a forward-thinking chocolate manufacturer in France, called "Dulcey" (pronounced "dull-see").
The Valrhona Dulcey chocolate, made from caramelized cocoa butter, sugar, and milk, starts out sweet, but once we've worked our magic, dark-chocolate fiends can't wait to sink their teeth in. We fold it in with local Vermont cream to create a ganache that's firm but creamy, then dip it into our Central American 70% dark chocolate and top it with coarse flakes of Maldon sea salt.
Even kids love it. So do people who think they don't like truffles. And of course, our new Dulcey confection is beloved by truffle fans everywhere!
Ingredients - Dulcey chocolate (cocoa butter, sugar, white milk powder, dried skim milk, whey, butter, soy lecithin, vanilla), organic Vermont heavy cream, 70% dark chocolate, sea salt crystals
The dulcey truffles are melt in your mouth great. The combination of lovely chocolates and just a bit of salt on top delights the whole pallet and its hard to stop at one... but why would you? I love these.
