It's no wonder this smooth and complex truffle is a finalist for the 2021 Good Food Award for best confection in the country. We developed it when we discovered a new type of chocolate from Valrhona, a forward-thinking chocolate manufacturer in France. They called this blond chocolate "Dulcey," ("dull-see." Note that DULCE, the Spanish word for "sweet," pronounced "dole-chay," does not have a "Y.") The Valrhona Dulcey chocolate, made from caramelized cocoa butter, sugar, and milk, starts out sweet. Once we've worked our magic, though, dark-chocolate fiends can't wait to sink their teeth in.
We fold in the Dulcey with local Vermont cream to create a ganache that's firm but creamy. Then, we form the ganache into a ball, dip it into our Central American 70% dark chocolate, and top with coarse flakes of Maldon sea salt.
Even kids love it. So do people who think they don't like truffles. And of course, our new Dulcey confection is beloved by truffle fans everywhere!
Ingredients - Dulcey chocolate (cocoa butter, sugar, white milk powder, dried skim milk, whey, butter, soy lecithin, vanilla), organic Vermont heavy cream, 70% dark chocolate, sea salt crystals
Our Vermont maple-toasted granola contains loads of whole almonds, walnuts and hazelnuts, Vermont maple syrup, and is baked fresh each week. We use fresh, dry-rolled, organic oats for the best flavor granola you have ever had.
This is our most sought-after confection. This gem features our house-made toffee (just local Cabot butter & pure maple sugar) enrobed in our 70% dark chocolate and is topped liberally with roasted, salted pistachios.
Chocolate Covered Granola
We call them Magic Chunks! Magic Chunks are bite-sized clusters of Nutty’s Steph’s granola swathed in our own chocolate. Every Magic Chunk contains whole almonds, walnuts, hazelnuts, sunflower seeds and maple-toasted oats
